Did I tell you that one of my hobbies is cooking? Yes, I like cooking and trying out new recipes. These two are my recent attempts :) I include the recipes, those who likes cooking may try it out.
~Seafood Fried Rice~
Ingredients:
2 eggs, lightly beaten
2 tablespoons cooking oil
1 onion, cut into wedges
250 g crab stick, cut into cubes
4 cups (740 g) cold, cooked rice
2 tablespoons soy sauce
4 spring onions, diagonally sliced
250 g cooked small prawns, peeled
1. Season the egg with salt & pepper. Heat half the oil in a wok or large frying pan & add the egg, pulling the set egg towards the centre & tilting the pan to let the uncooked egg run to the edge. When almost set, break the egg up into large pieces, so it looks like scrambled egg, & transfer to a plate.
2. Heat the remaining oil in the wok, swirling to coat the base and side. Add the onion and stir-fry over high heat until it starts to turn transparent. Add the crab stick and stir fry for 1 minute. Add the rice and stir fry for 3 minutes, or until the rice is heated through. Add the egg, soy sauce, spring onion and prawns. Heat through, then serve.
~ Sweet Chilli Chicken Wings ~
Ingredients:
2 kg chicken wings
2 cloves garlic, crushed
1/4 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon oil
1/4 cup (60 ml) sweet chili sauce
2 tablespoons honey
1 tablespoon white vinegar
1/4 cup soy sauce
2 teaspoons grated ginger
1 tablespoon soft brown sugar
1. Trim the chicken of excess fat and sinew (tendon). Cut each wing into two/three sections, discarding the tips.
2. Mix together the remaining ingredients in a large bowl. Add the chicken pieces and stir until coated. Cover and refrigerate overnight (or for several hours).
3. Preheat the oven to moderate 180 C. Drain the chicken pieces. Place the chicken pieces on a roasting rack over a baking tray or in a deep baking dish. Bake for 40 minutes, or until the chicken is crisp and cooked through. Serve hot.
